I noticed that most people seem to be using Titebond for laminating their cores. What sort of difference would epoxy make (other than cost)? I'm specifically interested in flex characteristics as well as potential weight differences (these would probably be negligible, but if epoxy will stiffen the ski, perhaps thinner cores could be used).

You could use epoxy, but it would be a lot more hassle than any strength gains. Usually wood glue bonds stronger than the wood anyway. Plus, wood glue is a lot easier and more pleasant to work with than epoxy and, you don't need to really protect yourself when using it because it washes off your hands, and is non-toxic. This final reason is about 95% of why I have always used wood glue.
