Tip/Tail space tape to attach to core
In the past I have had the luxury of extra wide sidewalls on my cores so I could easily tape the core to the tip and tail spacer without the chance of the tape ending up in the ski. I recently made a few cores and the sidewalls are much narrower this time and I am afraid that the tape will end up in the ski. I only have a few mm of extra sidewall material on both sides). So my question is - does anyone use tape that can safely bond within the ski?

Yeah I'm a huge fan of the staples method (although oddly I've never done it...). You can stable the very outer edge of the sidewall to the tip spacer, and it just gets cut off with the flash.
I don't do anything... and have never had issues. I just stick the tip spacer in place, and once everything is in the press I double check that things haven't shifted, if they have I do a little adjusting with some popsicle sticks, and its good.

+1 for paper first aid tape. Get the stuff that is really porous with light adhesive. I put it right in the layup, wets out nice, 7 pair made no delams.
