Is there any way to measure the pressure your press is putting down? mainly to work out how evenly the pressure is being applied?
Such as a mat or something that you can put in the press that will load digital information up showing which parts of the mat (press) had more pressure.

yup. There are many kinds of sensors - many are piezo and generate small voltages when stressed. There are capacitive ones that are like foam pads, which get used a lot for hobby robotics as touch sensors.
In fact, you could even incorporate strain sensors into a ski and measure actual forces applied to it
But the sensors are the easy part. The equipment to interpret the readings will be the hard part. I use a DVM and calibrate the sensor with known weights, and just make a chart
