Should the camber be centered with the true center or with the boot of sett center (the narrower part of the ski)?

what do you mean with "true center"?

I mean the middle. for example for a 180 cm long ski it would be at 90 cm. And assuming a 55% off set the off set would be at 81 (from the tail).

as the tip section is longer than the tail section, taking the real middle isn't sensible - the center of the camber will be way too much forward. If you want a "centered" camber, use contact point to contact point (the points where the ski "lay" on a flat surface).

Most skis I know however have the camber center at the boot center or only slightly in front of the boot center. In sportive on-piste skis, I put the camber center 30mm in front of the boot center; and the boot center equals the narrowest point of the ski.

to add to pmg's response, as I understand it, the narrowest point of the ski is commonly/should also be offset back from the center of the running length (so exclude the tip/tail) - generally 3-6 cm depending on the type of ski.
