Are you asking about the diffence between a hydraulic/pnuematic press vs. a vacuum press?

A pneumatic press is a little more involved to build and can get pressures around 50-60 psi. The down side is that it is going to be very large and heavy, require lots of metal, and if you want a cap ski, it'll require tight fitting cassettes.

A vacuum press is easier to build (you only need one side of the mold) and can be cheaper since you don't need so much metal. The advantages are that you get very uniform pressure, and the vacuum bagging material is clear so you can see if everything is lined up. The downside of this is that you can only get ~14psi at ambient pressure. This is probably adequate, but ideally you would want higher pressures.

The best solution is to build a pressure chamber and stick your vacuum mold inside. You can get huge pressures out of this. It is how they make composite airplane parts.
