Building a ski for a 75 year old senior

Colleagues,
I would like to build a custom ski for my father, who turned 75 this year. He is 173cm tall and weighs 115 kg.
He still goes skiing every year but in his own relaxed way. Few easy flat slopes on beautiful days with slow slipped basic parallel turns.
He has more difficulty with lose snow heaps and when there is poor visibility.
So I'm looking for a ski design that's forgiving, easy to turn and stable...
Regular manufacturers don't specifically advertise senior ski's.
I was thinking of a slalom size ski (length between 160 and 170 cm, radius 15m)
The core (poplar/ash) should be flexible in reference to his weight but dampned.
I'll try cork/rubber sheet just above the base in one of my other carbon skis soon.
For easy slipped turning maybe a flat profile with tip and tail rocker, the width between 75 and 85mm for stability.
Any thoughts, examples or hints are welcome.
