the wood used or fiber? or something else like the whole process of making?
I would say that it is the whole process, and mainly, how well the epoxy sets. If the epoxy sets and cures well, and no air bubbles are in the ski, then the bonds will last a long time. However, if an air bubble gets in the layup, it will steadily grow and over time weaken and break the epoxy bonds, thus causing the ski to lose camber and stiffness.
