Sidewalls

hey all.. we have now moved on to adding sidewalls to our planks... we have definitely hit a wall and could use some help. ... so our set up is as follows -

We are using a wedge to plane our cores and at the same time we have glued our sidewalls (fir and avc) and then fluted them to the core (poplar). Everytime we get close to the appropriate grade, we snap the avc.

Any suggestions on how to do this step differently... one thought is the temperature as it is getting cold in our garage .. we used a heat gun and still had the same problem.... we are really close but could really use some advice on this step.
