How would the vacuum shift the core towards the middle? The film or Membrane presses the skis onto the mold. Even if you have a little bridging that won't push the core to one side.
I'm pretty sure it's your effort to push out air or you somehow misaligned base and core.

So your sidewall thickness is just 2.5mm? I hope you have found a good way to align your cores.

Why do you build your cores in such a complicated way?

For my taste 11.3mm would make for a ski on the sloppy side even with 100mm under the bindings. Depends a bit on the cores.
I've only built one pair with similar dimensions so far. At a core thickness of 12mm i used 800g/m² Carbon quadrax on top and bottom laminate.
